The Fun

5 days ago I crossed an item off my bucket list, while simultaneously jumping WAY outside of my comfort zone: a very nice producer let me do live television to promote Vegetarian Comfort Foods.

I don’t know what she was thinking, either, but now she’s my favourite. Anyway, I lived to brag tell about it.

While I was stressing and trying not to throw up or pee my pants, my husband had a great time meeting the faces of Breakfast Television and playing Sports Centre by himself. (He loved it.)

The Drama

If you watch the video closely, I run out of breath towards the end because I forgot to breathe, but it’s cool, because no one noticed, except now I’m telling everyone, so you WILL notice, but I’m okay with that because…….(*passes out).

See how that happens?!

Anyway, I loved it, I’m super grateful that people let me promote stuff in situations like this, and hopefully I’ll have a chance to try not to throw up or pee my pants again.

I’ll keep you posted.

The important thing is that no expletives left my lips. This was my number one, genuine fear, because when I get nervous, I tend to let loose. But I didn’t, so that’s one giant point for Jen.

The Launch of Vegetarian Comfort Foods + More

This week’s been crazy. Actually, honestly, this whole month’s been crazy. Or the summer. I don’t know…but the madness is both exhausting and exhilarating.

On August 4th, my second book was let into the world: Vegetarian Comfort Foods.

This seemed amazing to me. I was at my family’s cabin last year when I was negotiating the deal with my editor, and I was at the same cabin on August 4th when it was released just a couple of weeks ago. Wow. And because I personally love an excuse to throw a party, we conducted a formal launch at a cute little shop that also is brand new, called Wildflower Artisan Collective in Abbotsford, BC.

Wine was kindly sponsored for the event by Fresita Sparking Summer Wine (this was the very first time I’ve dealt with obtaining a special occasion liquor license, so that was a special project in of itself), and tons of amazing friends and family came to get their copies signed by Yours Truly, and Tanya R. Loewen of Wild Honey Art House. (She took incredible photographs of all the recipes, and I am eternally grateful.)

Aside from the cookbook launch, I handed in a fourth book this summer, (Baby Nosh), my husband and I went to San Diego for our 10th wedding anniversary, my kids grew about two feet each (something about lots of water and sunshine?!), and I began working on my most fave contract of the year: the Surrey International Writers’ Conference. To wrap it up, I will be doing a short segment for Breakfast Television Vancouver on the very last day of the month.

This is live TV people, and I’m me. Go grab yourself some popcorn and nestle in for a slip or fall or some accidental profanity.

Seriously.

Having whizzed by at warp speed, this summer has been one of my best EVER, and although I don’t want it to end yet, I’m looking forward to what autumn brings. (Probably more craziness.) I hope you all have had your own summertime adventures to commit to memory, and thanks so much for reading my blog!

Hey, friends! I’ve been a busy girl. Actually, if it’s possible to be both lazy and busy at the same time, then that’s what I’ve been. Because I don’t feel particularly productive, lately…but I’ll think about that, later.

Anyway, I’m SUPER excited to announce the book launch for Vegetarian Comfort Foods! The book is being released on August 4th, but the launch will take place on August 20th at (drumroll, please!)…Wildflower Artisan Collective, in Abbotsford, BC!

The super cool part of this announcement is that this venue isn’t even open yet. It’s brand-spankin’ new–just like the book!

If you’re in the Vancouver/Fraser Valley area and feel the need to show off the fact that you spend your Thursday nights attending literary events (hehehe), then show your face, ladies and gents! There will be vino from a very generous yet-to-be-named wine sponsor, and goodies, and general awesomeness.

A bit about Wildflower: this very new business will be housing ONLY hand-crafted, locally-produced goods made by the citizens surrounding Abbotsford, BC. How cool is that?! The amazing ladies who are running the show are no joke–their first baby (aside from their actual babies) is Twine Abode, which is an eco-friendly skincare line.

I’m just so excited to be part of this whole thing, and I hope you can make it, so you feel the same way. Stay tuned for more details and the launch grows nearer, and in the meantime, I might try and post more than I have been lately. Admittedly, Fresh + Fit and the Surrey International Writers’ Conference (SiWC) and Baby Nosh are taking up all my time.

  • 8 frozen strawberries
  • 1 banana
  • 1 cup unsweetened almond milk
  • 3 pitted dates

Method

Blend until seemingly smooth. (You’ll probably still get a few tiny date chunks, which are delicious.) Drink up and smile! xo

I hope you’ve all done something miniscule or little or big or enormous to lend a hand to Mother Earth, today! Today’s blog is exciting for me, because I’m introducing a new business that won’t be formally launched for a few more months, but I’m taking on some amazing clients early, so I thought I’d share!

Fresh + Fit Vancouver is my latest and greatest project, spawned from the relentless requests I was receiving to write bios and ‘about’ pages and content for local businesses. I figured if there was a market for this kind of thing, then I’m in! Since my passion lies within the health and wellness industry, I decided to make it niche and remain in that realm.

Book Signing Event: Happy Healthy Gut at Chapters on Robson, Vancouver

Happy Valentine’s Day! This day is one of my faves, but not because of all the love and chocolate. February 14th marks the halfway point through February, which means it’s almost March, which means it’s almost SPRING!

And every Vancouverite out there is DYING for spring by this point in our long, dark, rainy winter.

It’s also 5 days before an event I’ve been waiting for since the fall: on Thursday, February 19th, I’ll be signing copies of my first book, Happy Healthy Gut: The Plant-Based Diet Solution to Curing IBS and Other Chronic Digestive Disorders, at my favorite bookstore, Chapters on Robson Street, Vancouver.

WHY is this my fave bookstore? Because it’s 3 floors of awesomeness that are accessed via old-school iconic escalator, and the store itself is deep within the heart of Vancouver’s notoriously fabulous shopping district. Plus, there’s a Starbucks. (Obviously.) Come find me on Thursday from 1-4, and I’ll happily gift you with an abundance of bookmarks, and a big, goofy smile.

Because this will never happen again.

On June 30th of this year, because of skyrocketing downtown leases, Chapters on Robson will be closing its doors, and relocating elsewhere in Vancouver. That day, my friends, will be a sad, sad day.

The Wellness Show is a weekend-long celebration of health and wellness, hosted each year in Vancouver. This year’s dates are the 13th-15th, and I’ll be there as a blogger on behalf on My Van City on the Sunday.

This year’s wellness experts put a lot of time and effort into researching the latest health trends, which I’m finding SUPER interesting. Some are surprising (I thought sprouting was in a couple of years ago),  but most are not (being more zen is definitely on trend). 😉 The rest of this post was written and passed along for The Happy Healthy Life to share by The Wellness Show, so without further adieu:

Here are the top trends we’re currently seeing in health and wellness:

1- Sprouting: Sprouting raw nuts, seeds, beans and grains is one of the quickest, easiest ways to pack a group of   nutrients into your body in just one handful. Eating sprouted foods also aids in digestion and helps to make your body’s PH more alkaline. Chat with the experts from Sprout Growers Dome at the show.

2- Non-GMOs: Not only are genetically modified foods unkind to the environment, but they are also bad for our bodies. You’ll find non-GMO-verified exhibitors at the Wellness Show. You¹ll also find kinder, better tasting, and better for you meat options, like local, grass-fed, free range beef and pork. Learn how to cook it, too, at one of our cooking demos!

3- Healthy snacking and smoothies/juices: Cold-pressed juices and smoothies are a great way to get a ton of vitamins and minerals in a very portable package. Vitamix will be one of the exhibitors at the show, and we’ll also have juices to sample from Bremner Juices, and supplements like vegan protein powders and Greens+ Superfood to boost your juice. Learn about healthy snacking on the run from our very own Liz Pearson, and discover the newest trend: Smoothie Bowls. They incorporate a smoothie, along with additional fresh fruit, and granola.

4- Good for your gut: Fermented foods are great for us, because they contain helpful bacteria that help with immunity and digestion. While at the Wellness Show, sample some saurkraut, sip some kombucha, try some sourdough bread or yogurt from Liberte and Yoplait. You can also try the latest probiotics at Nature’s Fare and Pure Pharmacy.

5- Bone Broth: one of the newest and most popular health food trends right now, this nutrient-dense, inexpensive and easy to make consume is thought to be excellent for bones and teeth, due to its high collagen content.

6- Cruciferous vegetables: Cauliflower is the current reigning king of cruciferous. You can make it into rice, you can mash it, and you can roast it whole. It takes on spices and flavouring incredibly well, and it¹s low in carbs. Other cruciferous veg that the world is currently loving? Brussels sprouts and other cabbages, for their ability to fill you up and their high fiber and vitamin content.

7- Stealthy Healthy: A fantastic new trend in eating out is healthy upscale restaurants. You no longer have to resort to ordering a salad when eating out if you want to be healthy. Restaurants are now dedicated to creating healthy food that looks and tastes amazing. Attend cooking demos by the chefs from Graze, Calabash, Tojos, and Top Chefs to learn new, healthy recipes and techniques.

8- Wearable tech: One of the biggest fitness trends is wearable tech that monitors your daily steps, how much you sleep, how much you eat, and how many calories you burn on your workout. Your tech is linked to your home computer or your smartphone. Another trend is apps‹your smartphone can now source your healthy lunch, prompt you to drink water, or help you to workout.

9- Connecting with your inner Zen: We need calm and peace more than ever in today’s busy world with never-ending emails and Facebook updates. Take a class on how to meditate, and learn how to better manage your stress. Learn about floating at Pure Float, and block out the world for a few moments to focus and centre.

10- New fun workouts:  Instead of hour-long workouts, the trend is to shorter, 20 or 30 minute, high-intensity workouts. Take a dance fit class at the show, or, learn how to set up your own home gym from Flaman Fitnness. Outdoor workouts are another great trend happening right now being outdoors has wonderful benefits to add to exercise. Happy Healthy Holidays! Sharing your favorite plant-based recipes

Hey, everyone! TGIF, am I right?! I don’t know about you, but my October flew by with insane determination, and November’s already kicking my butt, too. With no slow-down in sight (’tis the season for parties and get-togethers and perhaps a little fete-a-fete here and there), I know my brain will be mush within a few short weeks. SO…I thought maybe I’d try and conjure up a few simple ideas regarding shared eats. With Canadian Thanksgiving in the rearview mirror, and American Thanksgiving just down the road, it’s clearly that time of year.

When I’m asked to “bring a dish to pass,” there are definite times when I fall back on old, lazy favorites. But considering I have a recipe book coming out next summer, I thought maybe I’d attempt to raise the bar for myself and be ready to show up to my friends’ houses with something that looks (and tastes!) like I’ve put at least an ounce of effort and creativity into it.

I’m going to share three plant-based concoctions that I think might fit the bill, and hopefully you think they sound good enough to try at home. I specify “plant-based,” because I like to share ideas that fit with my usual foodie lifestyle, which is that of clean, whole, nutrient-rich eats. We get enough crap out there, right? Let’s set a good example and share some healthy, happy recipes!

Alright. Here we go…

Chocolate-Graham Banana Bites (Makes 32)

Ingredients:

  • 4 bananas (not too ripe)
  • 1/2 cup dark chocolate chips
  • 1/2 cup graham crumbs
  • 32 toothpicks*

Method:

Melt chocolate chips in double broiler, slowly. Slice each banana into 8 chunks (so there should be 32 chunks in total), and stick each with a toothpick. Once chocolate is melted, dip each banana chunk half-way into the chocolate, then dust with graham. The chocolate will harden, so it must be done quickly. Repeat until every chunk has been dressed, then cover and refrigerate until they can be served.

Acorn Squashed Casserole (serves 8)

Acorn Squash

Ingredients:

  • 2 acorn squashes
  • 1/4 cup olive oil
  • 2 tbsp. maple syrup
  • 1 tsp. cayenne pepper
  • 1 tsp. cumin
  • 1/2 tsp. turmeric
  • 1/2 cup cilantro
  • 1/2 cup watercress
  • 1/4 cup Italian parsley

Method:

Preheat oven to 400 degrees Fahrenheit. Slice each squash horizontally. Remove seeds and pulp, and discard. Slice squash into 1/2″ rounds. (Which will actually look like flowers.) Set aside. In a large bowl, combine oil, syrup, and spices. Add squash to bowl and mix well, until evenly coated. Bake in a single layer on cookie sheet for 10 minutes, then flip squash and back for another 6-8 minutes. Remove from oven and arrange in dish. Chop herbs and sprinkle on top of squash. Serve hot as a side dish.

Baked Ratatouille Bruschetta (Serves 12)

Grilled vegetables

Ingredients:

  • 1/2 an eggplant
  • 1/2 a zucchini
  • 1 orange bell pepper
  • 1 white onion
  • 4 cloves garlic
  • 2 tbsp. olive oil
  • 1 16 oz. can of chopped and roasted tomatoes
  • 1 large whole wheat baguette

Method:

Preheat oven to 350 degrees Fahrenheit. Finely chop eggplant, zucchini, pepper, and onion. Mix, and place in oven-safe dish. Mince the garlic and add to mixture, then stir. Drizzle olive oil over mixture, and then pour tomatoes over all the vegetables. Cover with foil and bake for 30 minutes.

Once done, remove from oven and let sit until it cools slightly. Meanwhile, slice baguette into rounds. Place a spoonful of ratatouille on top of each, and place back in the oven for 6-8 more minutes. Serve hot.

Serves 2

  • 1 cup (240ml) unsweetened almond milk or other nut, grain, or seed milk (strained if homemade)
  • 1 cup (240ml) coconut water
  • 1/4 cup (43g) chopped pitted dates (soaked, if using a conventional blender)
  • 1 teaspoon natural vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground cardamom
  • Pinch of ground cloves
  • Pinch of natural salt (optional, to bring out flavors)
  • 2 medium frozen sliced bananas
  • 1 cup (125g) ice cubes (optional)

Throw all of the ingredients into your blender and puree on high for 30 to 60 seconds, until smooth and creamy.

Boosters:

  • 1 tablespoon blanched raw almonds, soaked
  • 1 tablespoon chia seeds
  • 1 tablespoon flaxseed oil

Green Mojito

Serves 2

  • 1 cup (240ml) coconut water or water
  • 1 teaspoon finely grated lime zest
  • 3 limes, peeled and quartered
  • 1 cup (25g) torn-up curly green kale leaves (1 or 2 large leaves with stalk removed)
  • 1/2 cup (18g) firmly packed mint
  • 2 cups (320g) frozen pineapple
  • 5 drops alcohol-free liquid stevia, plus more to taste

Throw all of the ingredients into your blender and blast on high for 30 to 60 seconds, until smooth and creamy.

Boosters

  • 1 teaspoon wheatgrass powder
  • 1 teaspoon minced ginger
  • 1 teaspoon coconut oil

Serves 2

  • 1 1/2 cups (360ml) freshly squeezed orange juice
  • 1/2 cup (120ml) water, plus more as needed
  • 1/2 medium avocado, pitted and peeled
  • 1/2 teaspoon finely grated lime zest
  • 1/8 teaspoon ground cardamom
  • 2 cups (320g) frozen mango
  • 1/2 cup (62g) ice cubes

Throw all of the ingredients into your blender and blast on high for 30 to 60 seconds, until smooth and creamy. Add more water as needed to blend.

Boosters

  • 1/2 teaspoon wheatgrass powder
  • 1 teaspoon chia seeds
  • 1 teaspoon flaxseed oil

Grapefruit-Fennel Fix

Serves 2

  • 1/2 cup (120ml) water
  • 1/2 small fennel bulb, cored, trimmed of stalks, and chopped
  • 1 medium red grapefruit, peel and pith removed, seeded, and cut into chunks
  • 1 green apple, skin on, cored and chopped
  • 1/4 medium avocado, pitted and peeled
  • 1 1/2 tablespoons freshly squeezed lemon juice
  • 15 drops alcohol-free liquid stevia, plus more to taste
  • 1 1/2 cups (190g) ice cubes

Throw all of the ingredients (except the ice cubes) into your blender and blast on high for 30 to 60 seconds, until smooth and creamy. Add the ice and blast for a few seconds more, until smooth and chilled.

Boosters

  • 1 cup (27g) loosely packed baby spinach
  • 1 teaspoon flaxseed oil
  • 1 teaspoon pomegranate powder
